Which meat goes best with Pad Thai?

Pad Thai - Fried Thai Noodles

  • Soak the pasta in lukewarm water for 15 minutes.

  • Peel the shallots, cut in half and cut into fine rings.

    Peel the garlic and chop in to fine slithers.

    Cut the green of the spring onion into 3cm long pieces, halve or quarter them lengthways depending on the size. Finely chop the white.

    Cut the tofu block into 0.5 cm cubes.

    If used, cut the radish into fine cubes.

    Beat the eggs in a bowl and whisk.

    Coarsely crush the peanuts in a mortar.

    Wash and clean the mung bean seedlings.

    Take the pasta out of the water and drain.

    Cut the lime into eighths.

  • For the sauce mix, mix coconut blossom sugar, tamarind pulp, fish sauce and chilli flakes together with 200ml water in a bowl.

  • It is best to use a flat non-stick pan with a diameter of 28cm for frying. This can be used to prevent the egg from burning. Also use a flat wooden spatula.

    Heat the pan on medium heat, add 2 tablespoons of oil. Sauté the shallots and the whites of the spring onions, after 30 seconds add the garlic. Make sure that nothing turns brown.

    Add the tofu and radish and stir-fry for another 30 seconds.

    Now add the pasta and mix everything thoroughly.

    Add zugeben to the sauce mixture and mix again thoroughly.

    The pasta should now be soft, but not mushy. But they must also no longer be tough. If necessary, add some of the remaining sauce mixture or some hot water.

  • Use the wooden spatula to push the pasta mixture into one half of the pan. Put a splash of oil on the open area,

    Add the prawns and fry on both sides for 30 seconds. Then slide on the side with the pasta.

    Put another splash of oil on the free area and let the egg mixture slide into it, let it set for a moment and then cut it up with the spatula. It should look more like a scrambled egg than an omelette. As soon as the egg has become a solid mass, mix with the pasta mixture.

  • Finally add the mung bean seedlings, the peanuts and the green of the spring onions.

    Mix everything thoroughly again and continue to fry until the spring onions are a little soft.

    Serve and add lime to taste. Possibly add a little chilli flakes.
